Snowy Day

When we woke up Friday morning this is what we saw. It was like Christmas morning. I jumped out of bed and Lola and I went outside. I was so excited to see what she would do because this was all very new to her. She would pick up her paws at first but when she saw that her dogie friends were out she went CRAZY!!! They ran and ran and ran. It was a nice relaxing day of doing nothing and I am proud to say that I did not get out of my pajamas. Poor Nathan got up at normal time 5am and went to work. He did bring Chick fil la home for lunch. He is the greatest!!!

Finally the painters are gone after 2 weeks of invading our home. I wasn't so sure of the color at first. I had such a hard time picking a color and sticking to it. We wanted a grayish green, more on the gray side. The first color, I painted a small area and thought it looked like just the color but when they painted the room it was just GREEN. The second color is austere gray Sherwin Williams. It looks different colors throughout the day. I just love it. Even though picking a color was so hard, I can now say after living with it for a week I LOVE it. I am excited to start picking out curtains and accessories to go with the new color.

Carrot Banana Muffins

For the last month I have been trying out the Paleo diet. I started this because the gym where I work out was encouraging to try for a month. They provided meals for the week and most importantly a grocery list. It made it so easy. Nathan was not excited but he survived. One of my favorite things that I made from the month were these Carrot Banana Muffins. During the month my breakfast consisted of eggs, meat and veggies. I was craving something sweet in the mornings and I felt like I was cheating when I ate these. SO YUMMY and there is no added sugar!!!

Paleo Carrot Banana Muffins

Ingredients


Instructions

  1. In a small bowl, combine almond flour, baking soda, salt, and cinnamon
  2. In a food processor, combine dates, bananas, eggs, vinegar and oil
  3. Transfer mixture to a large bowl
  4. Blend dry mixture into wet until thoroughly combined
  5. Fold in carrots and walnuts
  6. Spoon mixture into paper lined muffin tins
  7. Bake at 350° for 25 minutes

Makes 18 muffins
